Serves 4

Ingredients

  • 4 apples, Jonathan or Macintosh, rinsed
  • 2 tsp fresh lemon juice
  • 4 tsp golden raisins
  • 4 tsp firmly packed brown sugar
  • 2 tsp sugar
  • 2 tsp ground cinnamon
  • 2 tsp margarine
  • 1 tbs unsalted dry-roasted finely chopped pecans or walnuts
  • 1/2 C rum or sherry

Directions

  • Preheat oven to 350 degrees F.
  • Core apples but do not cut through the bottoms. Cut a 1/2-inch wide strip of peel off the top of each apple around the hole. Place apples in a baking dish and sprinkle with lemon juice. Fill centers with raisins, brown sugar and sugar. Sprinkle all with cinnamon. Add margarine to each apple. Sprinkle nuts on top of apples. Pour rum or sherry into bottom of baking dish.
  • Bake 30 to 35 minutes, basting several times during cooking time. Serve warm or cold.

Microwave Method:

  • Place filled apples in individual glass custard cups. Cover loosely with plastic wrap and cook 3 to 4 1/2 minutes on high. Let stand 3 minutes and serve.
